Cannoli Monti


Ingrediente:

100 gr de faina Monti (50 gr faina integrala, 50 gr tarate)
1 ou
1 lingura de ulei
un praf de sare

Umplutura:
150 gr de branza de vaci
o mana de caise uscate
o lingurita de fructoza
coaja rasa de la o lamaie

Se prepara un aluat din ingrediente si se pune la frigider pentru 30 de minute. Intre timp se face umplutura, amestecand toate ingredientele.
Dupa 30 de minute, se intinde coca foarte bine si se taie in patratele (in functie de ce forme aveti). Se ruleaza aluatul pe formele de cannoli si se baga la cuptor pentru 10 minute la 160 de grade. Cand s-au racit, se pune umplutura in cannoli cu ajutorul unei lingurite.

Ingredients:

100 gr of Monti flour (50 gr whole wheat flour, 50 gr bran)
one egg
one spoon of oil
one pinch of salt

Filling:
150 gr of white cheese (Philadelphia cheese type)
one hand of dried apricots
one tsp of fructose
lemon zest from one lemon

Make a dough from the ingredients and put it into the fridge to rest for 30 minutes. In the mean time, make the filling by mixing together all ingredients.
After 30 minutes make the dough thin and cut it into small pieces. Roll it on the cannoli moulds and put them in the oven for 10 minutes at 160 degrees. When they are cooled down, add the filling inside using a teaspoon.

Mazare cu somon la steamer - Steamed Baby peas with salmon



Ingrediente:

200 gr de mazare tanara
2 bucati de file de somon
1 lamaie

Se stropesc putin cu ulei de masline si sare si se pun in cosul de bambus, impreuna cu lamaia taiata in doua, pentru 15 minute. Inainte de servire se stoarce lamaia peste peste.

Ingredients:

200 gr of baby peas
2 pieces of salmon file
1 lemon

Cut the lemon into 2 pieces. Add all 3 ingredients into the bamboo steamer for 15 minutes. When serving squeeze the lemon on top of the salmon.

RULOURI VIETNAMEZE "SLIM" - Vietnamese slim rolls






Ingrediente:

250 de grame faina (jumatate faina integrala, jumatate tarate)
50 de grame orez salbatic
2 oua
1 lingura de sirop de agave
40 grame de drojdie
50 ml ulei
100 ml lapte (sau lapte de soia)

Umplutura

2 linguri sirop de agave
1 lingura seminte de susan
2 linguri de scortisoara

Laptele caldut se amesteca cu drojdia si siropul de agave. Orezul salbatic se macina in rasnita de cafea, pana devine pudra.
Toate ingredientele se amesteca foarte bine. Coca se pune intr-un bol acoperit sa stea cel putin o ora la crescut.
Intre timp se face umplutura. Se amesteca siropul de agave cu scortisoara si susanul si se lasa deoparte.
Dupa ce a crescut coca (1 ora) se intinde o foaie subtire (atat cat se poate), peste care se pune umplutura.
Se ruleaza cu ajutorul unei hartii de copt (cazul meu) sau folie de alimente, dupa care se taie cu un cutit, la distanta de 1,5 cm fiecare bucata. Se aseaza in tava rulourile si se mai lasa la crescut 30 minute.
Se coc in cuptorul incins in prealabil, la 160 grade aproximativ 40 minute.
Cand se scot din cuptor se mai dau deasupra cu putin sirop de agave.

Ingredients:

250 gr of monti flour (half whole wheat flour, half bran)
50 gr of wild rice
2 eggs
1 spoon of agave syrup
40 gr of yeast
50 ml of oil
100 ml of soya milk (or milk)

Filling:
2 sp of agave syrup
1 sp of sesame seeds
2 sp of cinnamon

Mix the warmed milk with the yeast and the agave syrup. Make the wild rice flour, using a coffee grinder. Mix all ingredients and let it rise for an hour.
In the mean time make the filling. Mix the agave syrup, the sesame seeds and the cinnamon and put it aside.
After an hour, put the dough onto a board and make it really thin. Add on top of the dough the filling. Roll it with the help of the oven paper and then cut into 1.5 cm pieces. Let them rise again for 30 minutes into the oven tray. Put them into the oven for 40 minutes at 160 degrees. When you take them out of the oven put some more agave syrup on top, while they are hot.

Tofu prajit cu legume la aburi - Fried tofu with steamed vegetables


Ingrediente:

50 gr de mazare boabe verde
50 gr de soia verde (edamame)
50 gr de mazare tanara

Tofu se taie in cubulete de 1 cm, se pune intr-o tava cu hartie de copt. Se presara sare si se pune putin ulei de masline peste tofu. Se baga la cuptor pentru 20 de minute la 170 de grade.
Legumele se pun in cosul de bambus pentru 10 minute.
Legumele se servesc cu tofu pus deasupra lor.

Ingredients:

50 gr of green peas
50 gr of edamame (green soy beans)
50 gr of baby peas

Cut the tofu into 1 cm squares and put it into a tray with baking paper. Sprinkle some salt and add some olive oil on it. Put it into the oven for 20 minutes at 170 degrees. Steam the vegetables into the bamboo steamer for about 10 minutes.
Serve the vegetables with the tofu on top.

Rulouri surf n turf - Surf n Turf rolls


Ingrediente:

jumatate de piept de pui
50 gr de somon afumat
ulei de susan

Pieptul de pui se taie in doua si se subtiaza bucatile (usor, cu ciocanul de snitele).
Pe toata suprafata puiului se aseaza felii de somon afumat si se ruleaza. Cele doua rulouri se pun la steamer pentru 10 minute, dupa care se prajesc intr-o tigaie incinsa cu o lingurita de ulei de susan. Se servesc cu salata.

Ingredients:

half of chicken breast
50 gr of smoked salmon
sesame oil

Cut the chicken breast in 2 pieces and make it thin, gently with the meat basher. Put the smoked salmon on top of the chicken and roll it. Put the two rolls into the steamer for 10 minutes. Then fry them into a hot pan with one teaspoon of sesame oil. Serve with salad.

Kurtos Monti


Ingrediente:

400 gr faina (200 gr tarate, 200 gr faina integrala)
50 gr faina de soia
2 oua
30 gr de drojdie
un praf de sare
80 gr de fructoza
nuci pisate
coaja de la o lamaie
sirop de agave sau sirop de yacon

Se face coca si se lasa la crescut o ora, dupa care se pune pe borcane. Se mai lasa 15 minute la crescut, iar inainte de a le baga in cuptor se dau cu pensula cu sirop de agave. Se lasa la cuptor 15 minute la 160 de grade. Dupa ce se scot din cuptor se mai dau iar cu sirop de agave si prin nuca, asa cum sunt, fierbinti.

Ingredients:

400 gr of flour (200 gr bran, 200 gr whole wheat flour)
50 gr of soya flour
2 eggs
30 gr of yeast
one pinch of salt
80 gr of fructose
smashed walnuts
one lemon zest
agave syrup or yacon syrup

Make the dough and let it rise for an hour, after one hour put it around the jars. Let it rise for 15 minutes more and before putting it into the oven, smear it with some agave syrup. Let it cook for 15 minutes at 160 degrees. When you take it out of the oven smear it again with agave syrup and smashed walnuts, while it's still hot.
